A delightful small, intimate restaurant with modern cuisine that drips with the products Provence served either in the Victorian "conservatory" glass and girder dining room or in the shade of the ancient olive trees on the terrace outside. One of our favorite eateries in France.

With the arrival of Chef Philippe Colinet in 2014, the cuisine has reached new highs of skill and professionalism. The dishes are at once simple and complex. This experienced chef brings to the kitchens of photo chefl'Olivier a deft touch and creates both a visual appeal and feast for the senses. He brings with him impressive credentials having come from the five star The Château de Fère up in the Champagne country where he maintained a Michelin star for the last 4 years her was there. Before that he was Chef de Cuisine at that lovely Auberge des Templiers, a five-star luxury hotel on the doorstep of the Loire Valley and the Sologne. He has adapted to the Provencal larder and tastes in an instant.

Both our lunch on the terrace in the recently reworked "Bistr’O" and dinner in the ever lovely gourmet restaurant "L'Olivier" were filled with color and teh taste of the editerranean that we so love. The glamourous looking dinner with exquisite tate to match deserves a Michelin star at least from this already acclaimed chef. Marinated vegetables, tapenade and oil of Sarriette and a fresh crab off the shell with tomato water flat jelly rounds definitely meets that criteria. The entrée of roasted pigeon dish for Peter and red mullet for myself followed suit. Deserts are beautiful to see and better yet to savor.

The hotel La Bastide de St. Tropez is a place that you never need leave since the restaurant and hotel is open all year and serves neals from the time you arise to the time your head hits the pillow. And since the hotel is small, it allows very personal service from chef Colinet since he is Executive chef for both the main restaurant "L'Olivier" and the small bistro "Bastide’s bistr'O’s" that serves informally outside and by the pool and for room service.

But this Michelin starred eatery is accompanied by the more informal "Le Bistr'O" that serves breakfast, lunch and dinners as well as the fairly new "BBQ By the Pool" that has an outside, open to the sun combo wood fired pizza oven and grill/plancha where they serve, yes, pizzas that are to die for, fish, chicken, lamb and other meats that are first browned on the grill then baked in the pizza oven where they gain that delicate wood smoke aroma. But their grilled vegetables in many incarnations are simply fantastic. You can eat right from your chaise longue alongside the pool or under the umbrellas at low tables with a view of the pool and the buildings that surround it. You can see more on our video page >>.
