Restaurant "Fiori di Murano" of
Royal Hotel SanRemo*****, Liguria, Italy

This marvelous restaurant has a lunch menu that is especially designed to introduce you to Ligurian cuisine. Each course is built around a particular olive oil and is filled with the history of Ligurian culinary roots. And we found the food at restaurant Fiori di Murano (lunch or dinner) to be the essence of Liquiria and perfectly executed by Chef Flavio Leone.

Starting with a "amuse bouche" with a traditional local fish "capo maro", a "farinata" made with Chick Peas, water and extra virgin olive oil and a slice of "Sardinare" which is a local pizza recipe made with local anchovies, olives, water and flour for the crust topped with tomato sauce. We were poured a lovely, light local white wine that went perfectly with the various dishes we were served.

dining roomThis was followed with a delicious melting starter - Salt cod "millefeuille" with potatoes and courgettes, a vegetable pie "Niraschina" of dried cod with potatoes, nuts, pesto and parsley. The salt cod is also popular on the cost of France having been brought down originally by Vicking ships to trade for all the fabulous produce grown on the north Mediterranean coast.

There came a "Trofie Pasta" with basil, roasted pinoli and cherry tomatoes that was to die for.

The main course was fish carpaccio, a Wild Bass, broiled with croutons and with drizzled with a lovely light Chefolive oil. This was followed by a sinful chocolate cake with a melted chocolate center and drizzled with another dessert olive oil. The two went beautifully together.

Did we mention that the Italians really do make the best espresso? And it was served with another plate of goodies as if the chocolate dessert was not enough.

All to be enjoyed either outside on the lovely terrace that looks out over the sea or in the majestic grand dining room where we ate with views of the sea through the wall to wall windows on the coast side.
