Executive Chef Jean Paul Lair started giving cooking demonstrations complete with recipes back in 2009. They were a great success. Certainly the large group who was there when we filmed were not only enthusiastic but many were regulars to the demonstrations on our visit December 12, 2016. The program includes demonstrations as well as the dishes he has demonstrated, eaten for lunch afterwards.

Jean Paul Lair is joined by his talented Pastry Chef Laurent Dellac who shows you how to prepare his delectable desserts.

These days the demonstrations are scheduled for the entire season starting at 10:30am on the second Monday of the month till May. They keep the schedule updated on their site, so check the site before booking which you can do right from their site itself. Visit the Vallauris web site to book >>

Three Recipe Preparation Demonstrations

Please Note: We had a few technical problems with our microphone connection and to make it worse, there was heavy machinery tearing out the road in front of the restaurant. So please bear with the constant beeping of the "back up warning" of the equipment, the ripping and tearing of old asphalt and the occassional ground trembling that shook the cameras. But the bird song on the patio does help a bit as does the audience babble. Thank you for your patience - Editorial. (The 3rd in the 3 demonstration series featuring Veal that you can cut with a fork will be up within a few weeks.)

Lobster Soufflé
On December 12, 2016, Chef Lair demonstrated at Le Vallauris Cooking Demonstration how to prepare his “Maine Lobster Soufflé” recipe with an audience of 50+ enthusiastic foodie followers who then got to eat what they saw prepared in front of them.
